Annual global fisheries discards are estimated up to 16 M t. A lot of edible fish are included in the discards. Surimi processing has been especially applied in various fish species to utilize noncommercial fish catch. On the other hand, there has been a steep downturn in consumption of surimi-based products in Japan. It is suggested that lifestlye changes in Japanese decrease oppotunities to eat surimi-based produts. Understanding surimi-based products consumption in Japan is needed for effective promotion of various products. The present study aims for sustainable seafood consumption and explore personal factors which drive surimi-based products consumption.
